All Purpose Baking Mix recipe


INGREDIENTS

4 c. flour
2 ts. salt
2 ts. baking powder
1 ts. baking soda
1 c. brown sugar
1 c. sugar


METHOD

In a large bowl, combine all ingredients well, stirring with a fork to break up lumps.
Transfer to a covered container.
Make a double batch, if desired.

Chocolate Chip Cookies:
Preheat oven to 350*.
In a large bowl, place 3 cups mix.
Add 1/2 cup softened butter, 2 eggs and 1 teaspoon vanilla.
Beat together for 2 minutes or until well mixed.
Stir in 1 cup chocolate chips.
Roll into 1 inch ball and flatten slightly.
Place on greased cookie sheets about 2 inches apart.
Bake 12-15 minutes or until cookies are lightly browned around the edges.
Makes 20-30 cookies.

Oatmeal Raisin Cookies:
Preheat oven to 350*.
In a large bowl, mix 3 cups mix with 1 cup rolled oats, 1 teaspoon cinnamon(fresh ground if you can) and 1/2 teaspoon nutmeg.
Add 3/4 cup soft butter, 2 eggs and 1 teaspoon vanilla.
Beat together for 2 minutes or until well mixed.
Stir in 1 cup raisins.
Roll into 1 inch balls and flatten slightly.
Place on greased cookie sheets 2 inches apart.
Bake for 12-15 minutes or until lightly brown around the edges.
makes 3 dozen cookies.

Apple Muffins:
preheat oven to 350*.
In a large bowl, combine 2 cups mix with 2 cups grated and peeled McIntosh apples.
Add 1/4 cup oil, 1 egg, 1/2 cup buttermilk, 1 teaspoon grated lemon rind and 1/2 teaspoon cinnamon(fresh ground if you can).
Beat together for 2 minutes or until well blended.
Pour into paper lined muffin tins.
Bake for 15 minutes or until risen.
In a small bowl, whisk together 1 egg, 2 tablespoons soft butter and 1/4 cup sugar.
Pour a little over each muffin and bake for 20 minutes longer.
Makes 12 muffins.

Pancakes:
In a medium bowl, mix 1 cup mix and beat in 1/2 cup flour, 1 cup buttermilk and 1 egg.
Makes pancakes as usual until risen and golden.
Serves 4.
