Almond Roll Ups recipe


INGREDIENTS

1 c. butter, softened
1 pkg. cream cheese, softened (8 oz.)
2 c. flour
1/4 ts. salt
2 c. almonds
1 c. icing sugar


METHOD

In a large bowl, beat butter and cream cheese until light and fluffy.
In a medium bowl, combine flour and salt.
Gradually add to butter mixture and mix well.
Cover dough and refrigerate for 1-2 hours or until easy to handle.
Divide dough in half.
On a lightly floured surface, roll out one portion into an 18 x 8 rectangle.
Cut width wise into six 3 inch sections.
Cut each section into 3 x 1 strips.
Roll each strip around an almond half.
Place 1 inch apart on ungreased cookie sheet
Repeat with other half portion of dough.
Bake at 350* fir 12-15 minutes or until the bottoms are lightly browned.
Remove to racks to cool completely.
Roll each in icing sugar.
Store in air tight container at room temperature.
You can also freeze up to 3 months.
Makes 8 dozen.
