Amish Jam Cake recipe


INGREDIENTS

2 c. granulated sugar
4 c. flour, all purpose
1/2 c. butter or more
2 c. blackberry jam (or jam of choice)
1 c. black walnuts (or nuts of choice)
1 c. raisins or more
2 ts. cinnamon
2 ts. cloves
2 ts. nutmeg
2 teaspoons allspice
2 teaspoons baking soda, dissolved in 1 cup buttermilk
6 eggs or more

Icing:
2 c. granulated sugar
1 c. sweet milk
1/2 c. butter


METHOD

Place all ingredients in a large pan and mix thoroughly.
Bake in a 13 x 9 baking pan at 300* degrees for about an hour.
Pour icing over cake while cake is hot.

Icing: Cook until about as thick as cream.
Have icing cooked and ready to put on cake as soon as cake is done.
Pour on while icing and cake are both hot.
