Apple Cinnamon Muffins recipe |
INGREDIENTS |
2 1/2 c. oat bran flour
1 1/4 ts. cinnamon (or more)
1 Tb. baking powder
1/2 evaporated skim milk (or soy or rice)
3/4 c. apple juice concentrate
2 egg whites
1 apple, medium, cored and chopped, not peeled

METHOD |
Preheat oven to 425*.
Mix dry ingredients.
Mix wet ingredients.
Blend together and stir in apple.
Bake for 15-20 minutes or until toothpick comes out clean.
Can use either 2 mashed bananas or 1/2 cup applesauce.
This makes the muffins more moist. |
