Apple Pancakes (Latkes) recipe


INGREDIENTS

2 lg. cooking apples, finely chopped(Johnson or Granny Smith)
2 ts. lemon juice
1-1/2 c. flour
2 Tb. sugar
2 ts. baking powder
1/2 ts. cinnamon
1/4 ts. salt
1 egg, slightly beaten
1 1/2 c. milk
3 Tb. oil or melted butter


METHOD

In medium bowl, combine apples and lemon juice.
In another bowl combine flour, sugar, baking powder, cinnamon and salt.
In small bowl, combine egg, milk and oil.
Add egg mix to flour mix all at once; stir until just moistened(the batter should be lumpy).
Gently fold in apple mixture.
Heat a lightly greased griddle over medium heat.
Pour a scant 1/4 cup batter and spread into 4 inch circle.
Cook for 1 to 2 minutes on each side or until pancakes are golden, turning onto second side when pancake surface is bubbly and edges are slightly dry.
Add oil to griddle as necessary.
Makes 16 servings.
