Applesauce Blueberry Muffins recipe


INGREDIENTS

1 1/2 c. flour, all purpose
1/3 c. sugar
3 ts. baking powder
1/2 ts. salt, optional
1 ts. cinnamon, ground
1 c. blueberries, fresh or frozen(no sugar added)
3/4 c. skim milk
1 c. applesauce, unsweetened
1 c. bran flake cereal, slightly crushed
2 egg whites


METHOD

Preheat oven to 400* and line 12 cup muffin tin.
In a large bowl, thoroughly mix flour, sugar, baking powder, salt and cinnamon.
In a small bowl, mix the berries, milk, applesauce, cereal and egg whites
(If using frozen berries, drain juice from them before adding).
Stir liquid ingredients into dry ingredients just until dry ingredients are moistened, about 20 strokes.
Over mixing will create tough muffins.
Spoon batter into muffin tins.
Bake about 20-25 minutes until muffins are browned or until toothpick comes out clean.
Allow muffins to sit in the tuns for 2 minutes, then transfer them out to cool.
