Applesauce Raisin Muffins recipe


INGREDIENTS

3/4 c. flour, all purpose
1/2 c. flour, whole wheat
1/2 c. sugar
1 Tb. baking powder
1/2 ts. baking soda
1/4 ts. salt
1 ts. cinnamon, fresh ground if you can
2 c. bran flake cereal
1 1/2 c. applesauce, unsweetened
1/4 c. milk, fat free
3 egg whites
1/2 c. raisins


METHOD

Spray or line 12 muffin cups.
Stir together first 7 dry ingredients; set aside.
In large bowl, combine cereal, applesauce and milk.
Let stand abut 5 minutes or until cereal softens.
Add egg whites and beat well.
Add raisins and flour mixture, stirring only until combined.
Portion evenly into 12 muffin cups.
Bake at 400* for 20 minutes or until slightly brown.
