Barbecued Chicken recipe


INGREDIENTS

1/4 c. cider vinegar
2 Tb. brown sugar, packed
1 Tb. mustard, prepared
1 ts. salt
1/4 ts. pepper
1/8 ts. crushed red pepper
dash of Tabasco sauce
1/2 c. onion, chopped
1/2 lemon, sliced
1-1/2 ts. Worcestershire sauce
2 Tb. water
2 Tb. chili sauce
1/2 c. ketchup
3 lb. chicken pieces


METHOD

In a medium sauce pan, combine first 11 ingredients.
Bring to a boil and reduce heat.
Simmer for 20 minutes.
Add chili sauce and ketchup last; bring just to a boil, then remove.
Preheat oven to 400*.
Place chicken, skin side down, in a large shallow roasting pan.
Spoon some of the bbq sauce over meat and bake for 30 minutes.
Turn chicken skin side up and brush liberally with remaining bbq sauce.
Bake for 30 minutes longer, or until tender, basting often.
Serve with rice and more sauce, if desired.
Makes 4 servings.
