Basic Cooked Rice recipe


INGREDIENTS

2 c. uncooked rice, converted
2 c. chicken OR beef OR pork OR seafood stock
1-1/2 ts. onion, very finely chopped
1-1/2 ts. celery, very finely chopped
1-1/2 ts. bell pepper, very finely chopped
1-1/2 Tb. unsalted butter or margarine, melted
1/2 ts. salt
1/8 ts. garlic powder (or to your preference)
pinch pepper


METHOD

Preheat oven to 350*.
Combine all ingredients in a 9 x 5 loaf pan.
Seal pan snugly with aluminum foil.
Bake until rice is tender, about 70 minutes.
Serve immediately.
Makes 6 cups.

Note: You can count on this rice staying hot for 45 minutes and warm for 2 hours.
To reheat rice, either use a double boiler or warm the rice in a skillet with unsalted butter.
