Basic Pizza Dough recipe
2 1/4 c. flour
1/2 ts. salt
1/2 ts. yeast
1 ts. honey
3/4 cup hot water
3 Tb. olive oil + 2 ts. olive oil
In a large bowl, combine hot water and honey, or 2 ts. sugar to very hot water. Stir until dissolved. After water has cooled to roughly baby bottle temperature (around 100F) add the yeast, briefly and gently stirring to ensure it gets submerged. If you are unsure of your yeast or water temperature, wait 5 minutes. Bubbles should form.
Stir in olive oil, salt and flour until dough forms.
Using your hands, knead 5 to 8 minutes.
Cut dough in half and make 2 evenly sized dough balls.
Add 1 ts. olive oil to a small bowl, roll the dough ball in the bowl to evenly coat it with olive oil. Repeat for second dough ball.
Cover the bowls with plastic wrap or a dish towel and let rise for 1 to 2 hours.
After the dough balls have doubled in size, flatten each on a floured surface and stretch to loosely fit your pizza pan.
If you do use a rolling pin, roll from the center outward not quite to the outside edge and only roll it to double the thickness you want, then stretch it out.
You don't want to force out all the lovely little bubbles the yeast has worked so hard to make.
At this point you could cover it and let the dough rise again, for another hour or more, or add toppings and bake right away for thinner crust.
Add sauce, toppings, cheese etc.
Bake 7 to 10 minutes at 500F until crust is lightly browned and
cheese is bubbling.
Makes 2 approx. 8 to 10 inch pizzas
