Blueberry Bran Muffins recipe |
INGREDIENTS |
1 1/4 c. flour, whole wheat
3/4 c. oat bran OR wheat bran flour
1/3 c. sugar
1 ts. baking soda
2 ts. baking powder
1 c. vanilla OR lemon nonfat yogurt
2 egg whites
1 ts. vanilla
3/4 c. blueberries, fresh or frozen |

METHOD |
Combine the flour, bran, sugar baking soda and baking powder; mix well.
Add the yogurt, egg whites and vanilla and stir just until the dry ingredients are moistened.
Fold in blueberries.
Line muffin tins and fill each 3/4 full.
Bake at 350* for 16-18 minutes, or until toothpick comes out clean.
Remove from oven and allow to sit for 5 minutes before removing from tins. |
