Blueberry Pancakes recipe


INGREDIENTS

3/4 c. blueberries
2 Tb. honey
2 Tb. oil
1 c. flour
1 c. Silk Vanilla or Silk Original
2 eggs
1/4 ts. salt
1 1/2 ts. baking powder
2 Tb. cornstarch


METHOD

In a medium bowl, combine flour, cornstarch, baking powder and salt.
In a small bowl, whisk eggs, soymilk, oil and honey until thoroughly combined.
Pour the soymilk mixture over the dry ingredients and whisk gently until barely combined – the batter should be slightly lumpy.
Stir in the blueberries.
Cook on a hot oiled griddle.
Makes about 12 pancakes
