Blueberry Pie recipe


INGREDIENTS

5 c. blueberries, fresh
1 Tb. lemon juice
9 inch pie shell x 2
1 c. sugar
1/3 c. flour
1/8 ts. salt
1/2 ts. cinnamon, fresh ground if you can
2 Tb. butter or margarine
1 egg, large and lightly beaten
1 ts. sugar


METHOD

In a medium bowl, sprinkle lemon juice over berries; set aside.
Put one pastry shell into pie plate.
In a small bowl,combine 1 cup sugar, flour, slat and cinnamon.
Add to berries and stir well.
Pour into pastry shell and dot with butter.
Lay out remaining pastry shell and lightly roll out any creases.
Place shell over berries; seal and crimp edges.
Cut slits in top of crust to allow steam to escape.
Brush top of pastry shell with beaten egg and sprinkle with 1 teaspoon sugar.
Bake at 400* for 35 minutes or until golden.
Cover edges of shell with aluminum to prevent over browning, if necessary.
Serve with vanilla ice cream or whipped topping.
Makes 6 servings.
