Breakfast in a Muffin recipe |
INGREDIENTS |
1 c. flour, whole wheat
1 c. flour, all purpose
1/4 c. sugar
4 ts. baking powder
1/4 ts. salt
1 c. milk
1/4 c. oil
2 eggs, divided
8 oz. cream cheese, softened
1/4. c. cheddar cheese, grated
1/4 ts. season salt
4 slices bacon, cooked and crumbled |

METHOD |
Preheat oven to 425*.
Line or grease 12 muffin tins.
Mix flours, sugar, baking powder and salt.
In another bowl, mix milk, oil, and 1 egg; stir into dry ingredients, stirring just until moistened.
Fill muffin tins half full.
Beat cream cheese with remaining egg.
Stir in cheese and salt; mixing well.
Stir in bacon.
Spoon 2 Tb. into center of each muffin.
Bake 15-20 minutes, until muffins are done.
Serve warm. |
