Buttercreams Candy recipe


INGREDIENTS

1/2 c. butter
1 (3 oz.) pkg. cream cheese, softened
1-1/2 ts. vanilla (or substitute with another flavor)
4 c. icing sugar

Coating instructions:
2 c. chocolate chips
2 Tb. shortening


METHOD

In large bowl, combine butter and cream cheese.
Beat at medium speed, scraping the bowl often, until smooth (1-2 minutes).
Add vanilla and continue beating until well mixed.
Reduce speed to low and gradually add icing sugar until well mixed (4-5 minutes).
If mixture is too soft, cover and put in fridge 1 hour or until firm enough to form balls.
Shape rounded teaspoonfuls into 1 inch balls.
Place on wax paper lined cookie sheets.
Cover loosely; put in fridge for 2 hours or overnight.
Melt chocolate chips and shortening in sauce pan over low heat, stirring constantly until smooth.
Dip buttercreams into chocolate using toothpicks, letting excess chocolate drip off.
Put in fridge at least 30 minutes to set.
Makes 5 dozen candies.
