California Chicken Salad recipe


INGREDIENTS

1/2 c. butter
2 c. mayonnaise
1/4 c. parsley, minced
1/4 tsp. garlic, minced
Pinch of marjoram
Salt & pepper to taste
4 c. cooked chicken breasts, shredded (about 4 sm. breasts)
2 c. seedless red grapes, halved
1 stalk of celery, chopped small
1/2 c. slivered almonds
Lettuce leaves


METHOD

Melt butter in saucepan; cool.
In a bowl, gently stir the butter into mayonnaise, parsley, garlic, marjoram, salt and pepper.
In a large bowl, combine chicken, grapes and almonds.
Arrange this mixture on lettuce leaves.
Spoon dressing on top and sprinkle with paprika.
Serves 4.

Note: I have this in a flat bread wrap. This recipe can easily be cut in half.
