INGREDIENTS |
Capons are male chickens which have been castrated at six to eight weeks of age to produce birds with more tender flesh and a generous fat covering.
They are sold at seven to ten months of age.
Even though more expensive than a roasting chicken,, capons are a good buy for a large group of people.
Capons can be roasted or braised.
Roast capons for 22-30 minutes per pound. |

METHOD |
I have eaten many capons in my lifetime. My grandparents and father preferred them over a roasting chicken.
They are very tender and juicy and also wonderful cooked over a charcoal barbecue with a spit! |
