Capresse Chicken recipe |
INGREDIENTS |
8 bacon strips
4 chicken breasts, boneless and skinless
1 Tb. olive oil
1/2 ts. salt
1/4 ts. pepper
2 plum tomatoes, sliced
6 fresh basil leaves, thinly sliced
4 slices mozzarella cheese |

METHOD |
In a skillet, partially cook bacon.
Remove to paper towels to drain.
Place chicken in an ungreased 13 x 9 pan.
Brush with oil and sprinkle with salt and pepper.
Top with tomatoes and basil.
Wrap each piece of chicken with 2 strips bacon in a criss cross pattern.
Bake, uncovered, at 400* for 20-25 minutes until chicken is thoroughly cooked.
Top each piece with cheese and bake for 1 minute longer or until melted.
Makes 4 servings. |
