Carrot Cake recipe


INGREDIENTS

1-1/2 c. oil
1-1/2 c. sugar
2 c. carrots, shredded
3 eggs
2 c. flour
2 ts. baking soda
2 ts. vanilla
1 c. pineapple, crushed
2 c. coconut, shredded
1 c. nuts, chopped


METHOD

Preheat oven to 350*.
Combine all ingredients in large bowl and mix thoroughly.
Pour into greased and floured cake pan and bake for 60 minutes.
A knife should come out clean if inserted near the center of the cake.
