Cauliflower Cheese Pie in Toasted Crumb Crust recipe |
INGREDIENTS |
1/3 c. butter
4 c. breadcrumbs
1 head of cauliflower, small
1 onion, small
2 eggs, beaten
1/2 c. flour
1/2 ts. salt
1 c. milk
2 c. cheddar cheese, shredded |

METHOD |
Preheat oven to 350*.
In a large fry pan, melt butter.
Add crumbs.
Cook and stir over medium heat until light golden brown.
Pack three quarters of crumbs evenly over and up sides of a 9" pie plate.
In a medium pot, cook cauliflower and onion in lightly salted water until tender.
Drain and coarsely mash to make two cups.
In another bowl, smoothly combine eggs, flour and salt; gradually stirring in milk.
Add mashed cauliflower and cheese to milk mixture.
Pour into prepared crust.
Bake for 35-40 minutes or until set and lightly browned.
