Cauliflower Cheese Pie with Crumb Crust recipe


INGREDIENTS

1/3 c. butter
4 c. fresh bread crumbs
1 sm. head cauliflower OR 2 cups chopped broccoli and cauliflower
1 onion
2 eggs, beaten
1/2 c. flour, all purpose
1/2 ts. salt
1 c. milk
2 c. cheddar cheese, grated


METHOD

Preheat oven to 350*.
In a fry pan, melt butter and add crumbs.
Cook and stir over medium heat until toasted and light golden brown.
Press 3/4 of the crumbs on bottom and up sides of a buttered 9 inch pie plate.
In a medium sauce pan, cook vegetable(s) in lightly salted water until tender.
Drain and coarsely mash to make 2 cups.
Combine eggs, flour and salt and gradually stir in milk.
Add vegetable(s) to milk mixture.
Pour into pie plate and sprinkle remaining crumbs over top.
Bake for 35-40 minutes or until set and lightly brown.
