Cheesy Macaroni and Salmon Pie recipe


INGREDIENTS

1 c. elbow macaroni
15-1/2 oz. can salmon
2 eggs
2-1/4 c. bread crumbs, soft
2 green onions, thinly sliced
1 Tb. lemon juice
1/4 ts. salt
1/8 ts. pepper
3/4 c. cheddar cheese, shredded
1/2 c. milk
2 eggs, beaten
1/8 ts. dill weed, dried
1 Tb. butter or margarine, melted


METHOD

Cook macaroni for 8-10 minutes or just until tender; drain.
Meanwhile, drain salmon, saving 3 Tb. liquid.
Flake salmon, discarding skin and bones.
In a mixing bowl, beat 2 eggs and stir in 1-1/2 cups bread crumbs.
Add the onion, lemon juice, salt, pepper and reserved liquid.
Add salmon and mix well.
Press into bottom and up sides of 9 inch pie plate.
Set aside.
In a large enough bowl, combine macaroni, cheese, milk, 2 beaten eggs and dill weed.
Turn mixture into salmon shell.
Toss remaining bread crumbs with melted butter or margarine.
Sprinkle over macaroni.
Bake, uncovered, at 350* for 30-35 minutes or until set.
Let stand for 5 minutes before serving.
Cut in wedges and serve.
Makes 6 servings.
