Chicken Parmesan recipe |
INGREDIENTS |
4 skinless boneless chicken breast halves, trimmed salt and pepper, to taste
1/3 c. all purpose flour
1 egg, lightly beaten
1/3 c. dry italian bread crumbs
1 ts. garlic powder
2 Tb. grated parmesan cheese
1 Tb. each butter and vegetable oil
1 c. shredded mozzarella cheese
1-1/2 c. tomato sauce

METHOD |
Season chicken lightly with salt and pepper.
Coat with flour; shake off excess.
Dip into beaten egg and then roll in bread crumb and Parmesan mixture.
(Chicken may be prepared up to 2 hours ahead; keep refrigerated.)
In medium non-stick skillet, heat butter and oil over medium-low heat.
Add chicken and cook until golden brown outside and no longer pink inside, 12 to 15 minutes.
Remove from heat.
Sprinkle cheese over chicken, cover and let rest until cheese is melted, about 2 minutes.
Meanwhile, heat tomato sauce.
Serve with chicken. |
