Chicken With Lemon Parsley Butter recipe |
INGREDIENTS |
1 Tb. plus 1 ts. unsalted butter, softened
1/4 c. lemon juice
1-1/2 Tb. parsley, minced
1-1/2 Tb. shallots, minced
1-1/2 lb. boneless skinless chicken breast halves, cut into 1/2 inch slices
vegetable oil spray
1/8 ts. white pepper

METHOD |
Place butter in a mixing bowl and beat until fluffy.
Slowly beat in 1 Tbs. lemon juice.
Stir in parsley and shallot.
Chill parsley butter until ready to serve.
Turn on broiler.
Arrange chicken on a broiler pan sprayed with vegetable spray.
Season with salt and white pepper to taste.
Broil 4-5 minutes per side or until chicken is opaque throughout.
Drizzle with remaining lemon juice.
Serve chicken with lemon parsley butter.
Serves 4.
