Chicken and Dumplings recipe


INGREDIENTS

2 Tb. lard
1 lg. onion, chopped
1 ts. paprika
8 chicken thighs

Dumplings:

3 1/2 c. flour
3/4 Tb. salt
2 eggs
2 c. water


METHOD

In a large pot, put lard in and melt.
Add onion and paprika and fry for a couple of minutes.
Salt chicken thighs and cook until almost cooked.

In a bowl with a pouring spout, mix dumpling ingredients together, stirring well.
Using a sharp knife, pour mixture into the rolling, boiling water cutting off small pieces.
Cook for 18-20 minutes depending how many are in the water.
When they float and are fluffy, they are cooked.

Put chicken on one side of pot and dumpling on the other and let everything soak together for 2 hours.
