Chocolate Lime Mousse Dessert recipe


INGREDIENTS

Chocolate Base:
1/2 c. margarine
3 oz. (3 squares) unsweetened chocolate
1-1/4 c. sugar
3 eggs
2/3 c. flour
1/4 ts. baking powder

Topping:
1 envelope unflavored gelatin
1/2 c. sugar
4 egg yolks
1/2 c. lime juice
2 ts. lime peel, grated
4 egg whites
1/2 c. sugar
1/2 c. whipping cream, whipped


METHOD

Base: In a saucepan, melt margarine and chocolate.
Add remaining ingredients and stir until smooth.
Spread into greased 10" springform pan.
Bake at 350* for 20-25 minutes, or just until set.
Cool in pan.
Topping: In a small saucepan, combine gelatin, 1/2 cup sugar, egg yolks and lime juice.
Cook, stirring constantly over medium heat until slightly thickened, about 5 minutes.
It thickens more while cooling.
Stir in rind.
Chill just until mixture starts to set.
Beat egg whites and 1/2 cup sugar to stiff peaks.
Fold egg whites and whipped cream into lime mixture gently but thoroughly.
Spread over brownie base.
Chill until set, 3 hours or overnight.
Decorate with lime slices cut in half and grated chocolate.

Note: For a quick base, prepare chocolate chip brownie mix and bake as directed above.
