Chocolate Pudding Cake recipe


INGREDIENTS

1-1/2 c. biscuit mix
1/3 c. sugar
1 egg
1/2 c. cold milk OR water
2 ox. semi sweet chocolate, melted and cooled
2 Tb. shortening
1 ts. vanilla
1-1/2 c. water
2/3 c. sugar
6 oz. chocolate chips


METHOD

Preheat oven to 350* and spray a 9 x 9 glass pan.
In a large bowl, with electric mixer on low speed, beat together first 7 ingredients for 30 seconds.
Increase speed to medium and beat for 4 minutes, scraping bowl as needed.
Pour batter into pan.
In a small sauce pan, mix together the 1 1/2 cups water and sugar.
Heat to boiling, stirring occasionally.
Remove from heat and stir in chocolate chips.
Stir well until mixture is melted and smooth.
Using a soup ladle, carefully spoon mixture over batter.
Bake for 30-40 minutes or until done.

Note: This cake is surprisingly light and not too sweet.
