Chocolate Raspberry Loaf recipe


INGREDIENTS

1 c. chocolate chips
4 Tb. butter
2 c. flour, all purpose
1/2 c. sugar
1 ts. baking soda
1/2 ts. baking powder
1/4 ts. salt
1 c. walnuts, toasted and finely chopped
2 eggs
3/4 c. milk
1/2 c. raspberry jam, seedless
1 ts. vanilla


METHOD

Preheat oven to 350* Spray 9 x 5 loaf pan and set aside.
Melt chocolate chips and butter in small sauce pan over low heat.
In a bowl, combine sugar, flour, soda, powder and salt.
Add the nuts and mix well.
In another bowl, lightly beat eggs
then add milk, fruit and vanilla; beat until well blended.
Add chocolate mix and milk mix to flour mix and stir until just moistened.
Pour into pan and bake for 50-60 minutes or until toothpick inserted in center comes out clean.
Remove from pan and cool completely.
Makes 12 servings.
