Crepes recipe


INGREDIENTS

4 eggs, well beaten
2 c. milk
2 ts. sugar
2 c. flour, sifted
butter


METHOD

In a medium, deep bowl, mix flour, sugar and salt.
Combine well beaten eggs and milk.
Add egg mix gradually to flour mix, beating to a thin smooth batter.
Let batter sit for 1/2 hour.
Spoon 3 Tb. mix into hot buttered pan and spread thin; brown lightly on both sides.
As each crepe is done, spread with plum jam and roll up tightly; sprinkle with icing sugar.
These can be made ahead of time and reheated in a slow oven for a few minutes.

Note: Could not find my Grandma's original recipe.
