Crispy Vanilla Wafers recipe |
INGREDIENTS |
1/3 c. sugar
1/4 c. unsalted butter, softened
1/4 c. banana, ripe and mashed
1 egg, large
2 ts. vanilla
1/2 ts. lemon peel, grated
1/9 ts. nutmeg, ground
1/4 c. flour |

METHOD |
Preheat oven to 375*.
Spray 2 non stick baking sheets.
In a medium bowl, using an electric mixer on medium speed, beat together, sugar, butter, and banana until light and fluffy.
Beat in egg, vanilla, lemon peel and nutmeg until combined.
At low speed, beat in flour until a soft dough forms.
Drop dough by teaspoons, 2 inches apart, onto sheets.
Bake cookies for about 10 minutes, until edges are golden.
Let cookies cool completely.
Makes 48 cookies.
