Dill Pickle Potato Salad recipe


INGREDIENTS

3 lb. potatoes (about 8 medium)
6 hard boiled eggs, chopped
3 celery stalks, chopped
6 green onions, chopped
2 medium dill pickles, finely chopped
1-1/2 c. mayonnaise
1/4 c. dill pickle juice
4-1/2 ts. mustard
1 ts. celery seed
1 ts. salt


METHOD

Place potatoes in large pot with water.
Bring to a boil, then simmer for 20-30 minutes until tender.
Drain and cool.
Peel and cube potatoes and place in large bowl.
Add eggs, celery, onions and pickles.
In a small bowl, combine mayonnaise, pickle juice, mustard, celery seed and salt.
Pour over potato mixture and mix well.
cover and refrigerate for at least 4 hours.
Makes 8-10 servings.
