Fullproof Roasting recipe


INGREDIENTS

Roasting provides lots of natural flavor, so it is not necessary to add salt before cooking.

To infuse flavor into roasting meats, make shallow slits around the roast and insert slivers of garlic and fresh herbs.

Leftover cut onion is best stored in a tightly capped glass jar.
Plastic will release odor.
The onion will stay fresh for up to a week.

Lean cuts of meat do not have enough fat to keep them moist during cooking.
Baste them often to keep them tender.

Parboil root vegetables, such as potatoes, carrots and onions.
Place in oven proof pan and drizzle with non fat salad dressing.
Bake at 425* until tender.

To ensure even cooking, use a rack to allow heat to reach the bottom of the roast.
A rack also separates the meat from the drippings, so that it doesn't cook in the pan juices.
