Green Bean and Mozzarella Salad recipe |
INGREDIENTS |
2 c. green beans, fresh and cut in 2 inch pieces
6 plum tomatoes, sliced
8 oz. mozzarella cheese, cubed
1/2 c. Italian salad dressing
1/3 c. basil, fresh and minced
1/4 ts. salt
1/8 ts. pepper |

METHOD |
In a small sauce pan, place beans and cover with water.
Bring to a boil and cook, uncovered, for 6-8 minutes or until crisp tender.
Drain and rinse in cold water.
Place beans in large salad bowl.
Add remaining ingredients; gently toss to coat.
Cover and refrigerate for at least 1 hour before serving.
Makes 6-8 servings. |
