Hermit Cookies recipe |
INGREDIENTS |
1/2 cc margarine
2/3 c. brown sugar
2 eggs
2 c. flour, all purpose
1 ts. baking powder
1/4 ts. salt
sugar substitute equal to 1/4 cup sugar
1 ts. cinnamon
1/2 ts. nutmeg
1/4 ts. ginger, optional
1/4 c. walnuts, chopped
1/4 c. raisins
1/4 c. water at room temperature |

METHOD |
Preheat oven to 350* and spray cookie sheets.
Cream margarine and brown sugar together at medium speed until light and fluffy.
Add eggs and mix at medium speed for 1 minute, scraping down the bowl before and after adding eggs.
Stir in remaining ingredients to blend well.
Add along with water, to creamy mixture and mix at medium speed to blend well.
Drop dough by 1 tablespoon onto cookie sheets.
Bake at 350 for 10 to 12 minutes, or until cookies are browned on the bottom.
Remove them to wire rack and cool to room temperature.
1 cookie = 114 calories.
