Honey Chicken Nuggets recipe


INGREDIENTS

3 Tb. liquid honey
1 egg white, lightly beaten
2 lb. chicken, skinless, boneless and cut in 1 1/2 inch chunks
1 c. cornflake crumbs, crushed (about 3 cups)
1/2 ts. salt
1/2 c. mayonnaise, light if desired
1/2 c. Dijon mustard


METHOD

Preheat oven to 400*
Spray baking sheet.
In a large bowl, mix 1 tablespoon honey and egg white.
Add chicken and toss to coat.
Transfer chicken to colander and set over bowl.
On a sheet of wax paper, combine cornflake crumbs and salt.
In batches, dredge chicken in crumbs and place on baking sheet.
Bake for 8-10 minutes or until chicken is firm.
In a small bowl, combine mayonnaise, mustard and remaining honey. Serve dipping sauce with chicken.
