Honey Garlic Pork Loin recipe


INGREDIENTS

1/2 c. oil
1/2 c. liquid honey
1/3 c. soy sauce
1/4 c. brown sugar, packed
1 Tb. rice vinegar OR white vinegar
2 Tb. sesame oil
2 Tb. garlic clove, minced
3 1/2 - 4 lb. boneless pork loin roast, trimmed


METHOD

In a large bowl, stir together ingredients.
Pour into a heavy plastic Ziploc bag.
Put roast in bag and seal.
Marinate roast in the fridge, at least 10 hours or up to 24 hours, turning bag occasionally.
Preheat oven to 325*.
When ready to cook, transfer roast to pan and reserve marinade.
Bake for 1 1/2 - 2 hours, basting occasionally with marinade, until just faintly rosy inside and meat thermometer reaching 160*.
(Do not overcook as temperature will continue to rise while roast is standing).
Remove roast, cover with foil, and let stand for 10 minutes.
Slice and serve drizzled with any pan juices.
