Light Frozen Lemon Cheesecake recipe


INGREDIENTS

2 c. lemon wafer cookies, crushed
1/4 c. of light butter, melted
1/8 pkg. low fat cream cheese, softened
1/4 c. powdered sugar, sifted
1 can low fat sweetened condensed milk
1 pkg. fat free whip topping
Zest of 1 lemon
Juice of 1 lemon


METHOD

Mix cookie crumbs and butter and press into the bottom and one forth inch up the sides of a 9 inch spring form pan.
With an electric mixer, blend cream cheese and powdered sugar.
Add sweetened condensed milk, lemon juice and lemon zest.
Beat with electric mixer until smooth.
Fold in whipped topping.
Pour into spring form pan and freeze for several hours until firm.
