Mandarin Orange Frozen Dessert recipe


INGREDIENTS

60 buttery crackers (such as Ritz), crushed
1/4 c. light brown sugar
1/2 c. butter, melted
1 can unsweetened frozen orange juice concentrate, thawed
1 can sweetened condensed milk (not evaporated)
1 container whipped topping (8 oz.)
2 cans mandarin oranges, drained (11 oz. each)
1/4 cup chopped pecans


METHOD

Whisk together crushed crackers and sugar.
Stir in melted butter.
Remove 1/4 cup of the mixture and set aside for garnish.
Press the remainder evenly into the bottom of a 13 x 9 glass casserole dish.
Beat orange juice concentrate with the sweetened condensed milk until smooth.
Fold in whipped topping and mandarin oranges.
Pour into prepared crust.
Sprinkle with reserved crumb mixture and pecans.
Freeze at least 2 hours before serving.
Makes 12 to 24 servings, depending on cut size.
