Pasta Scramble recipe |
INGREDIENTS |
3 c. three color rotini pasta, uncooked
2 c. broccoli florets
1 c. shredded Cheddar cheese
1 tomato, diced
1/4 c. chopped green onion
4 eggs
1/4 c. milk
1 ts. dried basil
1/2 ts. each salt and pepper

METHOD |
Cook pasta in a large pot of boiling water 7 minutes.
Add broccoli and cook 2 minutes longer or until pasta and broccoli are tender but firm.
Drain and return to pot.
Stir in cheese, tomato and green onion.
Whisk remaining ingredients together in a bowl and stir into pasta mixture.
Cook and stir over medium heat about 3 to 4 minutes or until egg mixture is almost set.
Makes 4-6 servings.
