Potato Pancakes recipe |
INGREDIENTS |
2 eggs
1/4 c. milk
2 c. finely shredded potatoes, uncooked, drained
1/4 c. biscuit mix
2 Tb. green onions, thinly sliced
1 ts. salt
1 Tb. butter or margarine |

METHOD |
Beat eggs in medium bowl with hand beater until fluffy.
Stir in rest of ingredients except butter.
Melt butter in fry pan and drop dough by Tb., cooking about 3 minutes on each side or until golden brown. |
