Smashed Potatoes recipe |
INGREDIENTS |
16 small Yukon gold potatoes
1 Tb. olive oil
salt and pepper
your own spices as desired |

METHOD |
Bring a pot of salted water to a rolling boil.
Add potatoes and simmer for 15 minutes or so, until a skewer can be inserted easily.
Remove and drain.
Transfer to a greased cookie sheet.
Using a large, flat meat tenderizer, smash each potato into a thick pancake shape.
Brush the tops with oil and season.
Bake on top rack of oven until golden and crisp, about 25 minutes.
Turn broiler on and broil for 5 minutes.
Makes 4 servings. |
