Stuffed French Toast for 2 recipe


INGREDIENTS

2 eggs
1 ts. vanilla
1 ts. sugar
1/4 ts. nutmeg
2 Tb. fruit preserves (Orange marmalade is superb)
2 Tb. cream cheese, softened
4 slices of bread
1 pat of butter and a pinch of powdered sugar (optional)


METHOD

Combine first 4 ingredients and mix thoroughly.
Pour egg mixture into shallow bowl with a broad enough bottom to accommodate a slice of bread.
Spread 1 tablespoon each of fruit preserves onto 2 slices of bread.
Spread 1 tablespoon each of softened cream cheese onto the remaining 2 slices of bread.
Assemble two "cream cheese and preserve" sandwiches.
Dip each of the four edges into the egg mixture, and then each side of the sandwich.
Moving quickly to prevent the bread from becoming overly saturated, evenly coat with egg mixture and immediately place in hot lightly greased skillet.
Cover with small lid to ensure thorough cooking.
Fry to a golden brown roughly 3 minutes per side.
Top with butter and lightly sprinkle with powdered sugar, if desired.
