Turkey Stuffing Wedges recipe


INGREDIENTS

1/2 c. onion, chopped
1/4 c. butter or margarine
1 c. frozen peas and carrots
3 eggs
1-1/3 c. milk
1 c. turkey, cooked and chopped
1/2 c. cheddar cheese, shredded
2 c. herb seasoned stuffing mix


METHOD

In a small fry pan, cook onion in butter or margarine.
When onion is tender, but not brown, remove from heat.
In a colander, run hot water over peas and carrots to separate; set aside.
Meanwhile, in a large bowl, beat together eggs and milk.
Add peas and carrots, turkey and cheese.
Stir in stuffing mix and onion just until stuffing is moistened.
Turn mixture into an 8 x 1-1/2 inch round baking dish.
Bake at 350* for 35-40 minutes.
Let mixture stand for 5 minutes before cutting into wedges.
Makes 6 servings.
